Well, I just redid the template using some font called VC_swiss (with no asterisk next to it), and checked the fill font box.
Seemed to work, I didn't have any of the corruption issues I'd been having. I had previously been using Arial.

I'm about 90% certain I haven't been using the mouse scroll button at all (wasn't even aware the button was mapped to dynamic zoom). After more experimentation, I've found that creating a seperate symbol of the text I want in the layout doesn't always mitigate the issue.
Primarily though, the issue appears in the legends.
