It is best to follow the process outlined in the manual. Create the nozzles first, then assign them to a sprinkler. A sprinkler normally has a range of nozzles so it is necessary to set the flow characteristics for the nozzles, not the sprinklers.

I don't know of a direct route to Excel. You can save the report to a .txt file and then manipulate the report in Excel.

Do you have the report shown in this image? If not, check your settings for the reports path to make sure that the reports path is to the version 18 reports.
